Loverly Zucchini Bread

This is one of my favorite recipes that I inherited from my family.  It was handed down to me by my great-grandmother and I make it on a regular basis.  It’s super easy to make, you simply follow the instructions exactly and will have moist and yummy zucchini bread in no time!  

This recipe makes two loaves, which makes it perfect for sharing.

  • Vanilla – happiness, luck
  • Salt – protection, purification, healing
  • Zucchini – abundance and prosperity
  • Sugar – for sweetness and joy in life
  • Cinnamon – money, blessing, protection, healing
  • Walnuts – healing, protection

Pro tip: Gather all of your ingredients first and pre-measure if you have enough containers to do so.  

Ingredients:

  • 3 eggs, separated
  • 1 TBSP Vanilla
  • ½ tsp Salt
  • 2 cups grated (packed) Zucchini
  • 1 cup Vegetable Oil
  • ¼ tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 ½ cups Sugar
  • 3 cups flour
  • 2 tsp Cinnamon
  • ½ cup chopped walnuts

Instructions

  1. Preheat oven to 350 ° F (177 ° C)
  2. Separate the egg yolks and whites; set the whites aside.
  3. Beat egg yolks until light and foamy.
  4. Add oil, sugar, vanilla, and zucchini and blend well.
  5. Beat egg whites until stiff and peaks form. Fold into mixture
  6. In separate bowl, mix flour, salt, baking soda, baking powder and cinnamon until well blended.
  7. Add dry ingredients slowly mixing in until well blended.
  8. Divide evenly into 2 greased and floured loaf pans.
  9. Bake at 350 degrees for 1 hour. (A toothpick inserted in the center should come out  clean)

Remove from pans when they have cooled enough to touch with your bare hand (still warm, but not hot!) and allow to cool completely on wire rack.

Store leftovers in an airtight container. (2-3 days at room temperature; 7-10 days if refrigerated; up to 6 months if frozen)
